DEFINITION OF TERMS USED IN THE REPORT
- Artisanal cheese: Cheese that is produced by small companies (i.e. less than 50 persons) that produce cheese for their immediate locality and have very little branding and/or national distribution. In the case of cheddar, artisanal production means up to 1,500 tonnes per annum.
- Industrial cheese: Cheese used in the preparation of processed meals, but not including processed cheese. This is done so as to avoid double counting of volumes, particularly when attributing it to suppliers.
- Block: These product formats include pack sizes from 250g blocks/loaves up to 40lb blocks or larger industrial size cheddar, i.e. 640lb.
- Cut&Wrap: Usually portions, whether triangle or squares, of varying pack sizes <1kg, in vacuum sealed packs.
- Strings: Strings or sticks are retail formats typically marketed to children or as “on the go” snacks.
