Concentrated Whey – The process by which raw liquid whey is pasteurised and then concentrated to a proportion of its original weight through evaporation and contains a specific amount of total whey solids. This extends the product life and allows the concentrated whey to be transported longer distances for further processing.
Utilisation – The industrial processing of whey into further added value products. This does not include the pasteurisation of raw whey.
