This research investigates the state of the European enzymes in food applications market in 2009. The historical period is from 2006 to 2008, with forecasts to 2016. It offers a comprehensive insight to the European enzymes in food applications market, its structure and developments related to it. It clearly lists and defines the market drivers and restraints that have had an impact in the European scenario. It analyses pricing, distribution, legislation, and application issues faced by manufacturers in this market. The market is subdivided into seven segments. Individual revenues, forecasts and market shares are provided for every segment with detailed analysis of Drivers, restraints, pricing and applications.

Cost and time savings in R&D have also been achieved by technology sourcing and licensing. ProteoNic, a Netherlands-based research company focusing on protein expression systems, has had agreements with all the major enzyme manufacturers. Chr Hansen tied up with ProteoNic for enzyme expression systems, specifically for construct design and cloning.According to the agreement, ProteoNic will also help Chr.Hansen to engineer its strains for increasing upstream production. Danisco-Genencor has licensed the UNic toolbox of expression systems from ProteoNic for investigating and increasing yields from its fungal enzyme production systems. Novozymes has also licensed the UNicFTEE, fungal expression system for increasing yields from fermentation processes. ProteoNic's expression systems work on mRNA optimisation rather than on transcription upregulation, which has been the industry practice till now. Significant increase in yields and reduction in costs are expected from the use of this technology across the enzyme industry, as most of the major manufacturers have licensed this system.

Customer awareness is the key in acceptance of enzyme-modified food products. Currently, only genetically modified enzymes are liable for negative publicity. Enzymes replacing chemicals and providing process advantages have to be communicated to the consumer. Educating the customer is important, and it includes a major service component, which has to be addressed by the industry.
