People have always been interested in food as a
necessity for survival, source of pleasure and
comfort, way of socializing and pleasing the
appetite. Recently there has been a growing interest
among people in consumption of foods that provide
additional health, medicinal, physiological and
nutraceutical benefits beyond their original
nutritive value in an attempt to reduce the risk of
developing chronic diseases. This in turn has
inspired nutritionists in being more actively
involved in developing what is now known as
functional food, achieved by adding nutrients and
health enhancing food bioactive compounds to the
natural food item. This book, which is the author's
Masters Degree dissertation, investigates the
possibility of incorporating both plant sterols and
glucomannan in granola bars and testing their health
benefits especially in people with Type 2 diabetes
and hyperlipidemia. If proven effective, this
combination may contribute to reducing risk of
disease and consumption of medication. This book
describes in addition to the thorough literature
review of plant sterols and glucomannan, the
clinical trial conducted to test their effect.
