About Pectin

Pectin was first discovered in 1790 by the French chemist Louis Nicola Vauquelin. He was able to separate from fruit juice, a water-soluble substance that turns liquids into a gel. The name pectin is derived from the Greek word “pektos” that means curdling or congealing. The beneficial properties of pectin were discovered immediately even before its chemical composition was determined in the next century. Pectin is utilized widely in the food and beverage processing, cosmetics, and pharmaceutical industries.

Pectin as an ingredient is recognized by consumers on many product labels. Pectin is widely used as a gelling agent, stabilizer, and thickener in a wide range of food and beverages. Traditionally, pectin is used as a gelling agent in a variety of fruit-based products, which include jams, jellies, marmalades, fruit preparations for yogurts and desserts, and fruit filling for bakery products. Pectin is efficient in reducing syneresis in jams and marmalades as well as in increasing the gel strength of low-calorie jams. The typical dosage of pectin in food applications is around 0.5%-1.0%.

Further, the report states that one challenge in the market is the lack of availability of raw materials. Commercial pectin is largely manufactured from the peels of apples and citrus fruits such as lemons, limes, and oranges.
