Austria - The Future of Foodservice to 2021

Summary

Austria is a highly affluent country in comparison to much of wider Europe, boasting low unemployment and among the highest levels of GDP per capita. This is primarily due to the country’s strong economic climate prior to the financial and Eurozone crises. In recent years, however, Austria’s economy has been largely stagnant, with GDP growth underperforming in comparison to countries of similar wealth such as Denmark, Sweden and neighbouring Germany.

In 2016, Austria’s foodservice profit sector was valued at approximately EUR€ 14.4 Billion, making it the 12th largest European market (including Russia and Turkey). Similar to much of continental Europe, value growth has been predominantly driven by growth in transactions, with outlet numbers remaining stubbornly low despite interest rates being set at 0% by the ECB.

Austria’s Quick Service Restaurants (QSR) market was valued at approximately EUR€2.7 Billion, following a moderate sales value CAGR of 2.1% over 2014-2016. With consumers seeking a wider range of ‘better-for-you’ fast food options, fast casual outlets appear to have promising future growth opportunities. Until 2021, sales value growth of the QSR channel is forecast to accelerate to a 2.3% CAGR. This value growth will continue to be driven by a rising number of transactions rather than from new outlet creation.

In comparison to other foodservice channels, the coffee and tea shop market is relatively consolidated, with chain operators accounting for 33.5% of total market revenue. Coffee and tea shop chains tend to be more popular among younger consumers; 45% of those aged 25-34 stated their most recent visit was to a chain outlet, while chain visits fell to just 15% among consumers aged over 65.

Over the next five years, sales value growth of the channel is forecast to remain positive, driven by continued economic growth and a falling unemployment rate. By 2021, the market is forecast to reach a valuation of EUR€5.1 Billion.

Scope
  • As Austrian consumers continue to heavily favour domestic companies and brands, much of the foodservice market remains fragmented. International operators are therefore regularly seeking to create links between their brands and Austrian culture.
  • As consumers display little evidence of brand loyalty, product innovation has taken on greater importance among operators.
  • Austria’s coffee and tea shop market has entered a transitional period, moving away from instant and on-the-go coffee and towards longer, drawn out occasions, akin to that of traditional Viennese cafes. This transaction has been further facilitated by a number of ‘third-wave’ coffee shop operators that have entered the market.
