Market Dynamics

Industrial gases are used in the petrochemical, chemical, oil and gases , and other industries. The growing demand for fresh products and packaged food has led to the use of industrial gases in the food & beverages sector. Increasing working hours and changing lifestyles have affected the growth of convenience or packaged food. This has resulted in the growth of packing technologies and frozen foods. Nitrogen, carbon dioxide, and oxygen, are the major industrial gases used in various applications of food, such as freezing, packaging, chilling and grinding.

One of the major concerns in the food industry is the attack of bacteria or spoilage of food; to overcome this issue, researches suggest freezing or chilling food, where water forms ice crystals and the growth of bacteria is controlled.

Food-grade industrial gases are classified as a processing aid or additives. Nitrogen is an inert gas and is extensively used to delay oxidative and hydrolytic rancidity in fat rich foods. Carbon dioxide is used in cooling, freezing, modified atmosphere packaging and carbonization. Higher concentrations of Carbon dioxide (above 5%) effectively act as antimicrobial agent thereby delaying the food spoilage. Companies are increasingly investing in packaging technology free of synthetic preservatives by replacing them with food grade industrial gases. For example Deccan Field Agro Industries from India utilised active modified atmosphere packaging (AMAP) in order to extend the shelf life of Papaya over four weeks and export the fruit to Dubai. Oxygen is generally used in combination with carbon dioxide and/or nitrogen to have improved results. Oxygen is also used in packaging of fresh fruits to maintain its freshness.

Segmentation Analysis

Carbon dioxide is a major industrial gas used in beverages, to create the fizz found, especially in carbonated drinks. The volume of consumption in beverages varies with the water/Co2 solubility values and temperature, as sodas consume more volume of carbon dioxide, over fruit drinks. Properties of gas and food ingredients have to be considered before the interaction between the two components, as some of the gases lead to spoilage of food due to chemical reactions.

Regional Analysis

Western countries lead the industrial gases market, owing to high consumption of packaged food and the growing importance of preservative-free food. However, developing economies, such as China, India, and Brazil, are expected to grow at a faster rate in the coming years, due to the growing packaged food and innovative packaging techniques.

Most of the food processing industries collaborate with the industrial gases players or vendors for their gas requirements. During deliveries, transportation and storage facilities there is a huge loss of budget and gases in most cases. The ideal solution lies in generating own gas systems, which is an effective way to reduce the operational costs.
