Glucose syrup is a clear, colourless or pale yellow syrup, without strong smell, thick, viscous, sweet, but less than sugar; similar to fresh honey in its consistency.

Glucose syrup is made from the hydrolysis of starch. Glucose is a sugar. Maize (corn) is commonly used as the source of the starch, and the syrup is called "corn syrup". Glucose syrup is also made from potatoes and wheat, and less often from barley, rice, and cassava. Glucose syrup containing over 90% glucose is used in industrial fermentation. Syrups used in confectionery contain varying amounts of glucose, maltose, and higher oligosaccharides, depending on the grade, and can typically contain 10% to 43% glucose. Glucose syrup is used in foods to sweeten, soften the texture and add volume. By converting some of the glucose in corn syrup into fructose (using an enzymatic process), a sweeter product, high fructose corn syrup can be produced.

It`s primarily used in the food industry are as a thickener, sweetener, and humectant (an ingredient that retains moisture and thus maintains a food's freshness). Glucose syrup is also widely used in the manufacture of a variety of candy products.

Glucose syrup is used as a replacement for sugar or honey in many recipes that require a lesser degree of sweetness. It is also used in fruit and vegetable conserves and the production of sauce and ketchup. In some countries (for example, in the United States) glucose syrup has almost entirely replaced sugar in commercially produced lemonade and energy drinks.

Ukrainian glucose syrups market is consolidated. Production facilities are centred on small amount of companies. The market specificity fully relies on the trends in the main consuming industries, such as food processing (especially, confectionary industry), beverage production (juices, soft drinks, energy drinks, beer). Recent years (2014-2016) were a difficult period for all economic sectors in Ukraine. The dynamic of overall production in primary consuming industries is displayed in the diagrams below.
