Tea and tea beverages market is growing steadily with increasing day to day consumption and demand. In the manufacture of tea, the leaf passes through some or all stages of rolling, fermenting, and drying processes. The process has two purposes which are drying the leaf and allowing the leaf's chemical components to produce the good quality tea. Caffeine is a chemical found in tea, which gives the beverage its stimulating character but only adds a little to color, flavor, and aroma. Caffeine is about 4% of the solids in the fresh leaf, and one cup of tea contains 60 to 90 mg of caffeine. The most important chemicals in tea are the polyphenols or tannins that are bitter-tasting, colorless substances that give the drink its acidity. When a polyphenol oxidase enzyme is applied, polyphenols acquire a reddish color and form the aromatic compounds of the beverage. Certain volatile oils contribute to the aroma of tea and various sugars and amino acids contribute to the quality of the drink.

Green tea is one of the most popular teas, has less caffeine than black tea and is non-oxidized. To prevent oxidation, the leaves of Camellia sinensis are picked, dried and heat treated. Japanese typically steam and get a brighter green shade, while Chinese often have pan-fire leaves, creating a duller green color. Whereas, oolong tea, or wulong tea is semi-oxidized tea. The leaves come from the plant but are tossed or shaken in baskets, due to which the process of oxidation changes. They are heat-treated to stop oxidation, which can vary by region, creating various flavors.
