Moscow defines the overall consumer foodservice market

Due to the high disproportion of incomes in the country, Moscow and St Petersburg held the largest share in restaurants in Russia and drove the development of the overall market over the review period. As for the other regions, the level of development in restaurants varies widely. For those regions with economies based on oil, gas or other natural resources, higher consumer incomes attract a higher level of foodservice. Despite an impressive breakthrough in horeca and a growing eating-out culture, the number of foodservice establishments in Russia lags well behind Western standards. Even in Moscow there is one outlet for every 3,187 people, while in New York the figure is 365 and in Paris 126.

Mid-priced chains are booming

The previous year’s trend among restaurateurs to switch their focus to mid-priced outlets became even more evident in 2005. Increasing demand among middle class consumers for casual dining forced companies to discontinue the development of high-end restaurants and concentrate on promoting mid-priced establishments. Moreover, market participants are showing great interest in chained projects due to their greater profitability and brand recognition. The share of chained establishments is constantly increasing. This trend relates to all sectors within the foodservice market.
