Increasing Incidences of Pathogen Contamination in Dairy Foods


Both raw milk and pasteurized milk can get contaminated during bottling, shipment, and storage. Equipment failures and post-pasteurization contamination are two prominent causes of contamination of pasteurized milk. Listeria monocytogenes, Salmonella typhimurium, Escherichia coli O157:H7, and Campylobacter are four prominent sources of pathogens in raw milk.Raw milk has been found to be a major source of bacterial pathogens, leading to illnesses in human beings and even death in some cases. The regulatory bodies across the world have monitored and even regulated the consumption of raw milk, stating that the risk of raw milk consumption far outweighs the overall perceived benefits. Regions within the United States, like Vermont, had regulations pertaining to the consumption of raw milk i.e. Vermont H.125. However, it failed to assure the microbiological safety of unpasteurized milk.



The same regulations (i.e. measurement of coliforms level in milk) were then applied to pasteurized milk, and were proved to be valid, as the regulations were specifically designed to inactivate pathogens posing risks to public health.
