Milk Protein Concentrate (MPC) is produced using filtration methods (Ultrafiltration and Diafiltration) capturing virtually all of the casein and whey proteins found in the finished product's raw material volume, resulting in a casein-to-whey protein ratio equal to that of the original milk.

The MPC is provided by ultrafiltration of grade A skim milk and milk retentate spray-drying. This flexible, shelf-stable powder with a clean milk flavor and white to light cream color is a good replacement for non-fat and skim milk powder and can be used to create high-protein, low-carbohydrate specialty foods. Protein-stable, it is perfect in meringues, mousses, ice creams and desserts to whipping. It's the right complement to infant formula and nutritional beverages.

Although dairy proteins have a good taste and texture profile, challenges to formulate occur when designing products with very high protein levels. These challenges - and the need to overcome them - are here to stay, as the high-protein trend is only continuing to rise, especially among ordinary consumers.
