The yeast stops converting sugar to alcohol once this alcohol is added, and all of the residual grape sugar is left in the wine as residual sugar. The neutral grape spirits are often added within the first day and a half of fermentation if a sweeter fortified wine is desired. Many fortified wines will benefit from decanting and aeration as a result of the deep oak age.
