Whole milk is separated into cream and skim milk before producing milk protein concentrate. The lactose-reduced skim concentrate is produced by fractionating skim milk using ultrafiltration. This method separates milk constituents based on their molecular weight. The milk then travels through a membrane through which some minerals,lactose, and water pass. Due to their larger molecular size, casein and whey proteins cannot permeate through the membrane.

Spray drying is subsequently performed on the proteins, lactose, and minerals that did not pass through the membrane. Spray drying and evaporation further condense the residual elements into a powder by the processes of spray drying and evaporation.

Varieties of ultrafiltered or blended MPC can be subjected to various heat treatments, depending on the intended application of the final product. The nutritional value of an MPC product prepared at low temperatures will be preserved. MPC can be economically beneficial to processors of milk in cheese production because its inclusion increases the product's protein content, resulting in a higher cheese output for lower capital expenditure.
