Rum is a spirit made from sugar cane and thus has a sweet taste. But most of today’s rum uses molasses. Rum producers ferment the molasses before distilling the product into the drink. Rum may be white or dark rum. The dark colour of the rum is due to the longer fermentation period. Often, spices are added to many brews for an extra hit of flavor. Infusions of spices like vanilla, cinnamon, and peppercorns are done during aging. Spiced rums are carefully aged first before adding these flavours in. It blends with sugar molecules as they search for their desired taste. In the case of dark rum, the drink is characterised by the addition of caramel or by maturation in oak containers. In the case of white rum, no colouring additives are present because of the carbon filter processing. Rum can be mixed with soft drinks and other spirits like whiskey and vodka to create amazing cocktails for parties or special occasions as well, making it an all-rounder when it comes to Indian alcohol. The emerging category of Indian rum market is of white rum. White rumsgenerally have very little flavour aside from a general sweetness. White rums are filtered after aging to remove any colour. The Indian white rum market is observed to be growing with increasing cocktail culture. White rum is growing as a popular ingredient in many of the popular cocktails. With increasing bar and pub culture in India the consumption and popularity of cocktails are rising which would boost the sales of white rum in India and may help to reduce the rate of decreasing rum consumption and hence provide some stability.
