Primary steam and secondary steam provide the heat needed for evaporation and concentration. The former process is called single-effect evaporation, in which secondary steam is immediately condensed rather than heated. Multiple-effect evaporation is used when secondary steam is employed for yet another heating. Fruit juice concentrate typically undergoes 1-5 times of evaporation, increasing the solid content from 5%-15% to 70%-72%.
