Characterizing the Alteration of Ovoproducts Using New Analytical Approaches focuses on the capabilities (potential or proven) of the latest metabolomics based analytical approaches for the (early) diagnostic of the alteration of ovoproducts during their production/preservation processes. It details the ovoproduct matrix, their known sources of biotic and abiotic alteration, and their associated biomarkers. In addition, the book covers the capabilities (exploratory and characterization) of the latest metabolomics tecnics, both invasive and non-invasive, including chromatography, nuclear magnetic resonance, mass spectrometry, NMR, MS - including FTICR-MS -, and vibrational spectroscopy, such as Infrared - MIR, NIR - or Raman).

Olivier Goncalves University of Nantes, France. Olivier GONÇALVES is assistant professor in the Laboratoire de Génie des Procédés since 2010 (Nantes University). He has passed is Ph.D. thesis in analytical chemistry at Nantes University (2000) and since then has occupied research positions as post-doc researcher at EMBL (2000 to 2003) and as assistant professor in the Laboratoire Genome Microorganisme et Environment (LMGE - UMR CNRS 6023) (Blaise Pascal University) (2003-2010). Jack Legrand Universite de Nantes, France. Jack LEGRAND is Professor in Chemical Engineering at the University of Nantes since 1988. He is specialist in transport phenomena and mixing in processes and (photo) bioreactors. He has more than 210 publications in international journals and is co-author of 16 patents. He is Director of the Joined Research Unit (UMR), constituted by about 200 people, GEPEA (Process Engineering for Energy, Environment and Food) between CNRS, University of Nantes, ONIRIS and School of Mines of Nantes.
