Potato starch and cornstarch share a large number of similarities when it comes to the thickening agent. When Potato starch is mixed with hot water, it forms an opaque solution which later gets thickens, to form a gel that does not have clumps and tends to be clearer and neutral in taste. Additionally, as compared to corn starch, potato starch has some advantages as it readily combines with water and has high water binding capacity which helps in dissolving the starch easily.

Starch is one of the essential needs in the hotel industry. Starch is used in many recipes such as noodles, hot dog sausages, instant soup, bakery cream, potato chips, gluten-free recipes used in kosher food and Asian cuisine. In the bakery, potato starch is used to keep the cake moist for its soft texture. It also helps to reduce binding and sweating in the production of pre-packed grated cheese.

Potato played a crucial role in the European population boom in the 19th century. In the Friuli region of northeast Italy, potatoes are used to make a pasta called gnocchi.  In most regions for the production of petrochemical bags, based on oil and natural gas is produced by the European maize and the potato starch combined with co-polyester to a large extent from fossil fuels.

Potato starch consumes the perfect amount of carbohydrates in the daily diet.
